Spaghetti Squash…. ON THE FLY!

I worked late today – I originally planned to oven roast tonight’s vegetable, spaghetti squash, but as anyone with kids can attest…. nothing happens as you plan it!

SPAGHETTI SQUASH ON THE FLY

Exhibit A – Spaghetti Squash…. you have met your match, mister.  The Produce Mom is here & you are going down.

Slice squash in half lengthwise

Scoop out the seeds with a spoon

Place 1 half into a microwave safe container & fill hollowed cavity with water

Put 2nd half on top of the half with the water

Place squash in microwave

Microwave for 10 minutes… just enough time for mama to enjoy a post-busy-work-day glass of wine & update her blog ;-)

When squash is finished (the skin will be soft/pliable to the touch) – separate the halves & allow it to cool for a minute before you scoop out the squash.  Joe & Mac like this topped with some Parmesan cheese.  I’m not gonna lie…. I like it with parm too.

    Sounds yummy! I have no young people at home but will make this for Victoria next time she visits! Kenny likes squash too so we will definitely have it for dinner soon!

    looks good! sounds good! and apparently super easy!!!! just the perfect thing for a homemade dinner for one!! thank you!! :) now a silly question, when i buy the squash at the store, how do I know what to look for? soft? all yellow? help :)

      Hey Kelly! Spaghetti Squash is a hard squash & it should be just that – hard. If it’s soft, it’s rotten. Yes, it should be yellow, but don’t be turned off with some surface scaring or irregular coloring. You can see how the squash I prepared in this blog is far from “perfect”…scratches/scars are no concern. The real prize for all hard squashes is the beautiful “meat” on the inside. Here’s a fun fact for ya – hard squash can stay fresh in refrigeration for up to 6 months!
