
“Pantry Salad” – Easy Healthy Treat
Every Tuesday I try to be selfish…. It’s my day off from work, and is probably my favorite day of the week (sorry, boss!)
I usually do some sort of slow cooker dinner, I go to yoga, I try to do laundry & lately – I make myself this “pantry salad”
There is no real recipe to this salad. You just open your pantry & see what you have available. Today, I had a can of artichoke hearts, a can of black beans, a can of diced tomatoes & corn. Drain them well, rinse them if that’s your thing (I always rinse my beans!), and mix together in a tupperware style bowl.
You can season it however you want – today I did kosher salt, black pepper, roasted garlic & basil. Then I drizzle some olive oil & vinegar over it. Mix it well & you have a nice treat that will be waiting for you in the fridge this week when you need a snack. I also use my “pantry salad” in wraps, mixed with rice or even on top of tossed salads. The options are really endless!
