
Watermelon & Tomato Salad
Watermelons & Tomatoes… Summertime superstars. Most people know that tomatoes are a great source of lycopene – did you know that watermelons are also a great source of this phytochemical? yep – depending on the seasonality, watermelons can actually offer more lycopene per serving than tomatoes! Enjoy these 2 superfoods together in my tasty Watermelon & Tomato Salad!
THE PRODUCE MOM WATERMELON & TOMATO SALAD
INGREDIENTS
•1 clamshell baby romaine
•12 slices of vine ripe tomatoes
•6 (1/2″ thick) 4×4 inch squares of watermelon
•1/3 cup of crumbled queso fresco
•1/3 cup sliced green onions
•Jalapeno Vinaigrette (recipe below)
•Salt & Pepper to taste
DIRECTIONS
In a medium bowl, toss baby romaine with vinaigrette & season with salt. For each serving, place one watermelon slice on a plate, place some dressed greens onto watermelon. Top with tomatoes, cheese & green onions. Drizzle additional dressing over each serving. Season with salt & pepper.
DRESSING
Whisk together 2 jalapenos (seeded & minced), 3 T thinly sliced green onions, 2 T chopped cilantro, 1 T agave nectar, 2 garlic cloves minced, 1/4 cup fresh lime juice. Slowly drizzle in 3/4 cup extra virgin olive oil, whisking until well blended. Season with salt & pepper.
